In some blag systems the individual user can change the screen resolution themselves by going to that menu option. You are using the proprietary nvidia driver, which apparently has a .nvidiarc or somesuch that I know nothing about, nor do I want to learn anything about. This affects how that menu option works and likely can override it as well.
