I need to use a gui-less BLAG 10000 box to rip CD tracks into MP3 files, preferably with names. Any chances?

And if there was a gui, then what to use?

GUI use grip

For command line ripping, use cdparanoia. Something like:

cdparanoia -B songs.wav

or something like that should do it.

For encoding to mp3, use lame:

lame -h -b 128 songs.wav songs.mp3

would convert songs.wav into a 128k mp3.
